Wednesday Recipe: Pimento Cheese, Caviar of the South
One 3-ounce package cream cheese, room temp
1 1/2 cup grated sharp cheddar cheese
1/2 cup grated Monterey Jack cheese
1/2 cup good Mayo
1/4 teaspoon freshly ground black pepper
1/4 teaspoon garlic salt
4 tablespoons pimentos, crushed
3 teaspoons grated onions
cayenne pepper (optional)
Using a food processor or mixer, beat cream cheese until it is smooth and fluffy. Add remaining ingredients and beat until well blended. Keep in the refrigerator. Serve on crackers, toasted bread, or hamburger.
